No time to eat well (or eat at all) in the morning? If so, then I'm talking to you! Breakfast is key to setting the tone for the rest of the day, and essential if you're trying to lose weight and/or eat more healthfully. Here's a simple recipe that takes just 5 minutes the day before to assemble. I buy the ingredients in bulk and make them up in batches of 2-6 depending on who's going to be at home that particular week. They keep well in the refrigerator for up to 3 days. If you're mathematically-oriented, that's roughly 1 minute's worth of effort for a delicious grab-and-go, protein-rich, portable, keep-you-full-til-lunch breakfast solution!
1/4 cup oat groats (whole oats, easily available at amazon.com), rinsed
1/4 cup granola (my personal favorite, Nature's Path Organic Flax Plus)
1 tblsp chia seeds (amazingly nutritious, also less expensive on amazon)
1 tsp dried cranberries (for sweetness; raisins or other dried fruits work as well)
1 tsp cinnamon
1/2 cup of your favorite milk (dairy works but almond, hemp and coconut are better. Stay tuned for instructions to easily make your own & to avoid the extra sugar and preservatives of store-bought)
3/4 cup fresh or frozen chopped fruit (go for berries if you have the option)
Measure the ingredients, in order, into your container of choice and let sit in the refrigerator overnight. Target carries the perfect container, the 500 ml Ball mason jar you see above - but a bowl with a saran wrap covering works just as well. It's that easy… enjoy!
